Met with Brian Gibbons, the Director of Produce for Highland Park. They go after the upper class customer, with lots of prepared meals, fresh meats and seafoods, bakery and produce. Brian will promote cherries nearly every week as he agrees that it brings in the kind of customer that they target and he knows that his customers will pay the price. Brian told me that during most of the year, produce contributes 18.5% of the overall revenue, and during the summer (cherry season) that number grows to 23-24%. He plans on more Rainier promotions this year.
